最好的食材,往往藏在人迹罕至的地方。在海拔两千米以上的滇地深山,阳光穿透薄雾,洒在湿润的红土地上。每年雨季的惊雷过后,牛肝菌、松茸、干巴菌在原木与松针的掩护下悄然复苏。
它们无法被人工驯化,只能等待经验丰富的寻菌人,在天亮前循着香气采摘。为了不辜负这份大自然的偏爱,我们坚持剔除繁复的调味,只用文火慢熬的土鸡高汤作为底色。
把最高级的“野”,融进最日常的“鲜”。一碗米线,盛下整座大山的生命力。
The best ingredients are often found in remote and inaccessible places. In the deep mountains of Yunnan at an altitude of over 2,000 meters, the sunlight penetrates the mist and falls on the moist red soil. After the thunderous rain of the rainy season, cow's liver mushrooms, pine mushrooms, and dried earth fungi quietly revive under the cover of logs and pine needles.
They cannot be domesticated by humans. They can only be picked by experienced mushroom hunters, who follow the aroma to gather them before dawn. To not disappoint this favor from nature, we insist on eliminating the complicated seasonings and only use the slow-cooked chicken stock made from local ingredients as the base.
Integrating the most intense "wildness" into the most ordinary "freshness". A bowl of rice noodles encapsulates the vitality of an entire mountain.
