《米其林指南》诞生于1900年的巴黎万国博览会期间，1926年《米其林指南》开始将评价优良的旅馆特别以星号标示，1931年开始启用3个星级的评等系统。米其林公司为了维护评鉴的中立与公正，所派出的评鉴员都是乔装成普通顾客四处暗访，借此观察店家最真实的一面，《米其林指南》评鉴的权威性由此建立。

The "Michelin Guide" was born during the Paris International Exposition in 1900. In 1926, the Michelin Guide began to evaluate excellent hotels, especially with asterisks. In 1931, the three-star rating system was launched. In order to maintain the neutrality and impartiality of the appraisal, Michelin's appraisers were secretly interviewed as ordinary customers to observe the most authentic side of the store. The authoritativeness of the Michelin Guide was established.
